"Are you tired, run-down, listless???"

... Do you poop out at parties?" It might be all this HEAT! And I don't think a bottle of 'vitameatavegamin' is going to cut it......

What can we say? It's just been one hell of a HOTT week here, and it's been hard to even look at a stove, much less cook on it! Hence the lack of current postings, our sincere and cool apologies....

SO, we recently decided dinner needed to be made sans-heat. A perfect summertime meal, that requires no cooking or sauteing, baking or frying. Looking in the fridge, all we had was some yogurt, milk, and a ton of fruit courtesy of the farmers markets out recently, and the only section of the grocery store I can stomach. This mango inspired soup is the perfect chilled meal, topped with fresh sweet grapes, salty pancetta, and a sprig of mint to keep it fresh.... chop, blend, and enjoy in front of your AC. You will be feeling full and cool in no time!

Ingredients:

2 mangoes, as ripe as you can find!
2 tbsp nonfat plain greek yogurt (Chobani, get a big pint, it won't go to waste!)
1 1/3 cups non fat milk
salt & pepper
1 tsp ground ginger

Garnish:
1/2 cup red seedless grapes
1/3 cup chopped prosciutto



Ok, there isn't much to this recipe. Chop up the mango, throw it into the blender. Add the yogurt, milk, salt & pepper to taste (1/2 tsp salt and 1/4 tsp black pepper, add more or less to your liking), the ginger, and blend blend blend until nice and smooth! Pour into a bowl with a handful of red seedless grapes, and pre-chopped prosciutto (every grocery store has this, if MINE in Brooklyn has it, I guarantee yours does!). I preferred more grapes, the sweet bite with the salty prosciutto is perfect!!!! Enjoy & stay cool, peeps!
